I was excited to try these for the first time. They had come highly recommended. The New York strips were good and moist. I did expect a little more tenderness. The filets were pretty tough and dry. I'm hoping that I just got a bad cut and that they're not all like that. I paid close attention not to over cook and follow your instructions - they were between Medium and Medium/rare. Reverse seared steak is my absolute favorite! Aaron Franklin endorsed 44 Farms when he visited a grill shop in Houston a couple years ago.
