Cut it into three great on the grill steaks, cooked to 125F and left to carryover to 131. Slight bite(perfect for a NY cut) uncutuous and full of beef flavor. Worth the premium price.

Very tender -- melt in your mouth tender. Cooked on Xmas day. Was a hit. Added spices and roasted for 10 minutes @ 450 and then turned down the temperature to 275 and roasted for additional 2 hours. Let it sit for 30 minutes before slicing. Perfect!
