My Thanksgiving dinner: Ribeye filet, refrigerator thawed, prepared sous vide @ 135 degrees for 1. 5 hours, and finished with a combination pan sear/kitchen torch. Tender as a filet mignon with much more flavor. I don't think turkeys have anything to fear from me with regard to future Thanksgiving dinners.
