A wonderfully fresh version of this easily recognizable ground chile that can be used in everything from curries to cocoa. Its clean heat intensifies and clarifies flavors much like salt or lemon. A dusting of cayenne over fresh papaya or mango is a Caribbean tradition.

I bought this because I was out of Kasmiri chili powder, which I use in many Indian dishes (butter chicken, tikka masala etc). It probably will be too strong to replace that powder, but the quality of this cayenne looks and smells robust! My nose says, be careful, dont inhale it 😅 Looking forward to experimenting with it and how it may vary from "regular" cayenne.

Indian Cayenne is a finishing touch in lots of dishes I prepare. I sprinkle it on eggs, add a dash to tomato sauce, use it in marinades for all sorts of protein. A little goes a long way to elevate flavor.
