USDA Prime New York Strip

Please know yesterday (05/15/2026) my wife and I had one of the NY Strip steaks we purchased recently from 44 Farms. We did a comparison of the Prime NY Strip Steaks we purchased at HEB and know there was in our mind a major difference. What we saw was a steak that was trimmed properly with just the right amount of fat, unlike HEB who appears to add more fat to gain more money, and HEB more than likely does not wet age beyond 21 days. So not only were the steaks trimmed better by expert butchers at 44 Farms, wet aged 28 days and the taste and quality was superior to HEB.

Not as nicely butchered as I'd like considering this is premium beef at premium prices.

I was a disappointed in the flat iron not a good as it normally is
