Spare ribs, broken up racks

Actually, in this shipment, about half the racks were broken up. As a result, we needed 5 racks to find 8 bones to place in the competition box. In previous orders, for our practice runs, we didn’t have problems. It was disheartening to discover our competition racks we so beaten up. Even the membrane was broken on half the racks with 3 racks broken in two or more places. It undoubtedly impacted the injection retention and made it challenging to cut presentation quality ribs.

Very good flavor.

Wasn’t quite as tender, probably my smoking technique was a bit off.
