First time making cheese
I bought some goat milk locally and wanted to check out making cheese. It was a lot of fun and I shared with friends. I'm an adventuresome cook so making cheese was the next adventure!

I purchased the goat cheese kit after a recommendation from someone who said it produced great goat cheese. I purchase 1 quart of raw goat milk and followed your instructions for home pasteurizing. I then added 3 lightly pasteurized quarts and cultured the gallon of goat milk. I used the kit included cheese molds plus extensions I purchased separately and drained the cheese. I salted the cheese and rolled in Herbs de Provence. I did have to blot the cheese after salting. The cheese is wonderful! Friends of mine are asking for more. What a great introduction to cheese making at home! I definitely recommend your website :)

Makes excellent cheese, with a couple caveats...
I recently used this kit and made excellent goat cheese for the first time. It was easy with the supplies and instructions provided. I am giving it 3 stars because of a couple of issues.
The most important thing is that the thermometer supplied was very inaccurate. I heated the milk to 145 using the supplied thermometer to pasteurize. I checked the temp with another instant read thermometer and it read 163! Double checked with another thermometer and it also read 163, a difference of almost 20 degrees!
The other issue was that the 4 molds supplied were completely filled using a half gallon of milk. If I had followed the instructions and used a full gallon of milk, I would have needed twice as many molds as were supplied in the kit.
I will continue to use my kit making half gallon batches (used a gram scale to weigh half of each packet of culture) and my own instant read thermometer.
