Off the Wall Cheese Press Plans

Great baseline to reference

We used this set of plans to get the measurement for proper weight but then added our own twist. I used a hook on the wall and an eyebolt on the lever instead of a bracket. This way I can pivot it across the counter and just unhook and hang out of the way.

I also adapted the plans to make the press free-standing. Word of caution...you will have to move the notch positions and recalibrate them if you do this or you won't have space for molds under the first 2. I made it out of solid oak I had on hand and used a clevis pin for the hinge. Using a simple dial scale, I was able to come up with positions and weights to figure out every press weight I will need using 1, 2, 2.5, 5 and 10lb free weights. If you go that route, I highly recommend you use a sturdy fabric bag instead of string. It is a lot safer.
