This reed cheese mat is used when air drying cheese, especially soft, mold ripened cheese. Using this mat will allow whey to drain and air to circulate when cheese is draining, air drying and aging.

Great for initial drying
They absorb the whey so it assists in the drying, but you need to switch them out over time. If used as an aging mat, they mold, so use something else for aging.

Works great for cheddars or gouda
These work really well for dryer curd cheeses such as a cheddar, though if you’re doing a wet cheese with softer curd or draining with an open bottom mold , then I would like the reeds to be a little bit bigger as I find it does trap the wey a bit. Other wise it’s great for a drying mat and well made! Would recommend for the home cheese maker for sure!
