Starter culture
I haven't used the Thermophilic culture yet. I suspect it will be just as convenient to use as the Mesophilic culture that I use often. Pre measured packages make it easy to get the right amount.

Great results!
My first time making a Vaccino Romano and thus far I’m very happy with the results. It’s been aging for a month and it already looks great. The photo of my wheel is just after it was pulled from the press. We’ll see how it is in 9 months when I get to try it out.
