I use it to teach cheesemaking.
I teach cheese making for fun. This is a really good mesophilic starter to teach a basic cheese. People seem to like the results.

Kosher Cholov Yisrael starter!
I was super thrilled to find this product, as it is the only product that I know about that is not just Kosher but also Cholov Yisrael. I bought the smallest size available (10 CXU), which should be enough to make cheese from about 25+ gallons of milk. I store the powder in the original packaging, inside a ziplock bag, in the freezer, and use about 1/8 teaspoon per gallon of milk. So far so good!
