This is my go-to culture for making Parmesan, which comes out with a wonderful scent, flavor and density.

Su casa
I used the Su Casa to make a parmesan and a romano thus far. Both the cheeses are looking great and have nice aroma so far.

SU CASU CULTURE
I am fairly new at making cheese , although I am absolutely hooked , I have ordered Su Casu culture to make a Maasdam wheel , I am in the second stage of letting it age for 14 days in the slightly warmer temperature to let the gases develope before sealing it to further age , the aroma is incredible , now to wait until it is fully aged before I can take a sample of it , thank you New England Cheese Making Company !!!
