My carbonara was wonderful because of the high quality of the guanciale. I cooked for my roommate and myself. He especially like it. Itās hard to get quality specialty meat where Iām living in a small suburban area, where there is a dearth of cultural and ethnic diversity, so itās nice to find a way to access what I need. It reminded me of of the carbonara I had when I was in Rome many years ago. I really missed and wanted to recreate a little bit of the experience.
