Gorgeous Knife!
The Kaizen II met my expectations. Coming from a German knife, this is certainly a bit different, however, still has some traits that make it a nice "transition" to the Japanese knife world, especially the balance.
Out of the box, was very sharp--I suspect she will get even sharper once I tune her up a bit, but for brand new and without slicing your finger off as you adjust to the character of the knife, it was just right.
Having a non-polished surface takes some getting used to, but this is of no matter.
Overall, extremely happy and I have a feeling this will be the beginning of my new knife "problem", lol :)

First real chef knife!!!
I have never owned a real sharp chef’s knife so my experience is limited. However, I have prepared many delicious dishes but one thing remains the same…the struggle to cut, mince, chop and slice ingredients without elbow grease. This knife is amazing; no more extreme force cuts with ease almost unreal. Scary sharp right out of the box!!!
