White Cedar
Great go to for quick prep or sides. I have various hinoki boards and use my Japanese blades on nothing else. This size has been just right for travel cooking and picnics as well, and dedicating one side to meats/allium and the other to fruits and mild vegs gives 2 for 1 flexibility. Just remember to wet the board on both sides before every use and wash right after - they'll last 20 years or more if treated well.
