Perfect match for Japanese knives
The perfect and least toxic option for Japanese knives. I was looking at the rubber ones but decided to go with hinoki. Super soft (but somewhat self-healing). You probably shouldn't whack it with your knife as it is too soft, but you wouldn't do that to Japanese knives anyway. Save that job for a different board and knife. Also smells amazing. Easy to wash clean, then occasionally I sanitize with hypochlorous acid. It tends to absorb oils though, but can be helped by lemon and salt rub.

Better than you would think.
A wood cutting board obviously takes care and cleaning. It's lighter weight than you would expect and the smell you get when you first wet it and wash it is something I wish could stay.

A joy to use, smells wonderful!
Good size, lightweight and easy to clean, great for my knives. I oiled it before using it. The Hinoki smells absolutely wonderful, still quite pungent after a month.
