Stunning presentation - a whole piece of the filet with herbs on top. The fish itself was delicious. I ate some out of the tin and really enjoyed the delicate flavor of the juniper and lemon thyme. It wasn't overwhelmingly herbaceous. I made it into rillettes, topped it with a quick juniper pickled cucumber to bring out the juniper flavor and added salmon roe on top
