Cold-Smoked Trout Fillets w/ Dill & Fennel

Best trout ever!

This was my all time favorite trout I've ever tried, tinned or otherwise, the flavor was light and fresh, the texture of the fish was flaky and delightful, I especially enjoyed the fatty bit right under the skin, I'll be buying this tin again and again!

Very silky, soft trout with a nice amount of dill and a good smoke level. However, it was too oily for me.
