Above and beyond service from customer service! In particular, Joanne! I had an issue with the first delivery. She made it right immediately. The knife is excellent - exactly what I need. C&M has excellent YouTube videos that really explain the characteristics of each knife. Hope to buy more in the future.

Beautifully made

Miyabi FC61 (Swedish AEB-L) steel is exceptional for its toughness at low edge angles. The upward angle of the handle improves knuckle clearance on the cutting board.
