I really appreciate having a dedicated prep knife , and this is one for the record books. Sharp is an understatement , it has a great tip for delicate precise cuts. Light weight but balanced ,comfortable beautiful handle . As nice to look at as it is to use with the stainless Damascus blade the red bands and the inlay in the handle is subtle and seemless against the birchwood. If your considering this knife I would watch the cutlery and more YouTube video on the birchwood series, so informative and helped me make my decision . Would highly recomend if your wating to step up your prep game.
