My Favourite Matcha

I have tried over a dozen types of matcha in the past 3 years and this has to be my favourite one. It is full of all kinds of flavour especially the umami that makes it so delicious. I highly recommend giving this one a try.

When I started drinking matcha I assumed that the best matchas are light and sweet, without bitterness. Gradually I changed my mind. Sweetness and bitterness go hand in hand, I now think. Sweetness loses its pleasure without the contrast of bitterness, and bitterness loses its sense of depth without the contrast of sweetness. Each depends on the other — a Zen thought, perhaps. Anyway, I say this because Ayame surprised me. Although it’s a bold matcha, the balance is delicate. The more I drink it, the more I like it.
