Stunning Sayaka
Sayaka is sublime and highly versatile. Prepared like gyokuro, expect a tea that is absolutely packed with savory umami and an almost oily texture. Prepared like sencha, you get a really elegant and balanced profile with noticeably more sweetness. Definitely a mood-booster either way! Haven't done a mizudashi brew with it yet, but I can already tell it's amazingly well-suited for it. You can't go wrong with this one—it's worth every penny and the color is gorgeous.
My preference is sencha style prep with breakfast before I start making my daily matcha, and I usually steep it three times! Below are the parameters on which I've settled:
5g leaf + 110-130mL water in an unglazed, flat Tokoname kyusu (by Maekawa Junzo)
1st steep @ 155F
2nd steep at 165F
3rd steep @ 176F
