One thing not as many people talk about with baking steels is how much they help with pastry baking. Even when I’m not baking on it, I keep my steel in the bottom of the oven as a heat sink and it DRASTICALLY reduces the temperature swings as the oven cycles. It makes delicate things like macarons a whole lot less frustrating in a home oven. It’s really a must have for a serious baker.
