Love the Modernist Cuisine Baking Steel! The baking steel takes it to a restaurant level quality crust!
I do use the 72-hour pizza dough recipe which is the "go to" at this point and stands above all other pizza doughs I have tried. It's delicious! Crisp with a nice chew and has flavor! It elevates your toppings! 😀

Works like a charm. I’ve made pizzas twice using the Baking Steel 72 hour pizza dough recipe. The dough is simple to make and compares favorably with any pizza I’ve had at upscale pizza restaurants. The steel is easy to work with and cleans up quickly after cooling. I’m glad I took the plunge and bought this. My wife and have a new tradition, Sunday Night Pizza.

After two friends recommended that I try a Baking Steel, I purchasedone recently and have used it to make both smashburgers and pizza on the grill. Both meals were a huge success. We bought an infared thermomether to measure the surface temperature before grilling and during the baking process. Next on my list is to make sourdough bread on the Baking Steel.
