The wheat gluten comes with instructions for seitan and I’ve also experimented with recipes that I found online. It tastes just like the seitan I’ve been buying in grocery store. But making my own makes sense— it’s more economical and fresher.

Great for baking whole wheat bread
Great stuff-- I add a couple tablespoons to King Arthur's golden wheat flour and it makes springy, light whole wheat bread!
