I have bake bread every week for the last 20 years. At first I started baking for fun, then everyone refused to eat store bought bread, thus 20 years. Gluten is an absolute necessity if you bake bread, the non gluten substitute is to inconsistent. Besides gluten adds protein and thats good in my world. Your gluten is very good and provides consistent results, if your not allergic it's the only way to go.
