There's nothing like cornbread with soup, and these muffins are perfection in soup weather! The only thing better would be a loaf of cornbread, but Shannon M in their review gave me a fabulous hint to fry them on the griddle and use for breakfast sandwiches. Thank you, Shannon and Mariposa!

These are among the best cornbread muffins we have ever eaten. Unlike most, they are not dry or crumbly. They go great with soup or chili.
