I am a casual baker (bread, croissant, bagels, cakes etc) and recently ventured into sourdough. This proofer is a game changer!! I first saw it at a bread making class where the chef brought his personal B&T to make sure the bread proofed within the time limit for the class. The reliable and steady temperature (and humidity) ensures a predictable rise. Makes it easy to gauge the timeframe and the quality of the proof is terrific. I bought the extra rack so I can proof multiple loaves at the same time. It folds down for easy storage (and I bought the bag). Love it - wish I got it sooner!!
