Vietnamese Lemongrass Curry

I was excited to try the Vietnamese Lemongrass Curry, especially knowing how much I enjoyed the spicy version. This one is much milder, which makes it incredibly approachable. The flavour is fragrant and comforting. You still get that fresh lemongrass brightness and gentle savoury depth, but without the heat. It feels warm and aromatic rather than spicy, which makes it easy to serve to a crowd. What I really appreciate is how family friendly it is. I made it for friends and for my niece and nephews, and they loved it. It has enough flavour to keep things interesting, but it is soft and balanced enough for anyone who is sensitive to spice. It is a great entry point into Vietnamese inspired flavours. Familiar enough to feel safe, but unique enough to expand your table a little. I will definitely keep this one around for gatherings where I want everyone to feel included.

Even my preschooler loves this sauce. It's very flavorful and makes a quick and easy weeknight dinner.

Delicious Curry!!!

This is so easy but so delicious. We sautéed chicken thighs, carrots and potatoes. Dumped in sauce and let gently simmer for a couple hours. Wow!!! Please try this!!!!!
