Great Daily Prep Knife With a Few Quirks
Been using this 5.5" Mizu Prep for a while now and it honestly turned into one of my most-used knives. Think of it as a mini chef knife rather than a big paring knife. It handles onions, garlic, herbs, fruit, shallots, boneless proteins, and small prep jobs really well.
Out of the box sharpness was excellent and the SG2 steel definitely holds an edge longer than most VG-10 knives I’ve owned. The micarta handle feels secure even with wet hands and the balance is solid for pinch grip.
That said, this is not a laser. If you're expecting crazy thin Japanese cutting performance, temper expectations a bit. Mine felt slightly thicker behind the edge than I expected, especially on dense stuff like carrots or apples. Not terrible by any means, just not “fall-through-food” geometry.
Fit and finish was good overall, though not absolutely perfect for the price. Spine and choil could’ve been smoother.
Still, for a reliable, good-looking, stainless Japanese prep knife that actually gets used every day, this thing earns its spot. I reach for it way more than I expected.
