This scimitar is legitimately crazy sharp OOTB! The build and quality is just superb and very comfortable. In the box they include the tested string and had a testing score of 59! I'm so glad I found Town Cutler. I do wish home base was in vegas instead though haha j/k. You guys would probably be more popular if you moved operations in vegas haha Anyways, excellent choice on choosing Nitro-V as the steel. It gets wicked sharp in no time and not prone to chipping. Looking forward to buy more of your guys knives and other products. Get the eXo Blues new design with scimitar and bread knife and the others in stock already so I can buy them 😜

11” scimitar for breaking down big pieces of meat

​used this on a Chuck roll and the ease at which it sliced through and the accuracy of the cuts was insane and put my meat crafter to absolute shame!
