Super light weight cutting board. Holds food in place, does not slide around on our quarzite countertop, and easy to clean. Worth the investment to protect more delicate blades.

Hasegawa Pro-PE Cutting Board

I was looking to upgrade my cutting boards from the cheap white plastic boards I have used for years. I have a large teak cross-grain wood board that I have been using for a while, but started researching other boards that would be gentler on my Japanese knives and weren't so heavy. I have moved over to brands like Shun and Global and several other Japanese brands of knives after many years of using Zwilling and Wusthof. I love using my Japanese knives, but they are more prone to dulling with use and need to be sharpened or honed more frequently than my German knives do. After seeing a number of YouTube reviews of various Japanese cutting boards, this one got my attention. It's a nice size and because of the wood liner, it will not warp and it would be nice and light for its size. The black color would give a nice contrast to everything I am cutting on the board. Cutlery and More delivered the board quickly and I put it to use right away. It certainly lives up to my expectations and has been very gentle on my knives. The only downside is after washing with a sponge and mild soap, the textured surface seems to retain excess water from the rinse. You have to be sure you dry it thoroughly before storing it. Perhaps because the board is black, I notice this more than with my old white boards. Great service from Cutlery and More, and it is usually my first stop when looking for knives.
