Well-built, reliable, works for hash browns.
I've had this pan for about a week now, used it repeatedly for a few different things, putting it through its paces, and now I feel comfortable recommending it. Here's the details... First, this pan is a bit heavier than I expected, and definitely heavier than it looks, but not uncofmortably so. It's noticeably lighter than my cast iron, and noticeably heavier than my ceramic nonstick, so it sits right there in the middle, which is about where I want it to be. It LOOKS like it'd be light like a standard teflon nonstick, so I've found it fun to hand it to people and watch it break their expectations. That said, the weight is not awkward or anything, and it makes it feel indestructible, so no complaints. Performance-wise the pan once again defied expectations, but in a good way. I'm sure we've all seen the advertisement, where the egg sticks a little bit on the first use, but after the seasoning builds up it glides around like a teflon nonstick pan. Well, that was not my experience. Fried eggs were part of the second meal I cooked with this pan, and they didn't stick AT ALL. To get that kind of glide on my cast iron, it takes a whackton of oil, basically almost deep-frying the eggs. This pan doesn't take nearly as much oil to get the eggs gliding around the pan. I did break the yolk on one when I flipped the eggs, but that's a skill issue, not the pan's fault. I don't like it for steak as much as my cast iron (different pans for different purposes, after all), but it WILL do an excellent job with steak. With regard for care and maintenance, it's not very fussy. I did get it a little too hot on my first cook with it (searing a steak), but it handled it like a champ. Cleanup is pretty easy, I spray it down with water to cool it off and get the bulk of the mess, and then use a soft brush with a little soap, everything comes off pretty easily without ruining the seasoning. The seasoning/conditioning process after cleanup is pretty quick and painless, it takes me maybe a minute or two, tops, and after just a week I can already see the seasoning building up on the pan. Now, for what I was most curious about, will it work well for hash browns? YES! Usually I have not been able to successfully cook hash browns, because they would always stick to my cast iron like glue. Fried rice too, in fact. My hash brown technique is not perfect (yet), but this pan solved the biggest stumbling block I'd had with cooking them. Get the temperature and oil right, and they come right off the pan with little effort. I can finally reliably cook my favorite breakfast food, I'm excited to try fried making rice with it as well. To make a long story short, it's probably my new favorite pan. Will I use it for everything? No, probably not, but I can tell this pan is going to be a reliable workhorse that I can use for many different things.

I have had many pans over the years, all promising on thing or another, but never quite achieving the full promise. So far this one has meet the challenge, no stick, and easy to maintain with no toxic coatings.

Wonderful 4 weeks in…
I am trying to replace old nonstick pans with healthier versions. I learned about this company through an IG influencer. This is my second Misen product- the first was the 8QT stainless steel pot. So far I’m very happy with it. My only issue is with food sticking when I try to cook up a bigger batch of scrambled eggs. Not sure how to fix this as it doesn’t happen with 2-4 eggs. But it comes clean each time. Only time will tell how it will hold up, but as of now, I am happy with my purchase.
