Awesome
Great knife! Great service identifying what was needed! And great turn response and response time when I had a complicated question.
The blade is well built, has balanced handling, and it's a great and deft workhorse for most prep needs. It keeps it's edge well if it's cared for appropriately.

Capable Little Brother
I recently bought this Enso Hizashi 5.5” prep knife as I had a very positive experience with its big brother Hizachi Bunka knife. I wanted a prep knife, otherwise known as a petty knife, with a higher blade height of 1.6”. This is much higher than the typical petty knife. This gives more clearance for chopping and slicing.
The VG10 steel delivers a very sharp blade, and the 1.6mm spine also gives a nice feeling of being very solid and not delicate, just like its big brother.
You can’t go wrong in the looks department either. The hammered Tsushime and polished Damascus finish is a real looker too. Rockwell hardness of 91 is great as well.
Does a great job with prep work on cucumbers, onions and tomatoes.
Enso delivers again with a great performing and looking knife for a great price which I can highly recommend!

THIS IS A TREASURE AND A GO-TO FOR SMALL JOBS THAT ARE TEDIOUS TO HANDLE. IT MAKES EASY WORK OF DICING SHALLOTS AND OTHER SIMILARLY UNWIELDY MINIATURE INGREDIENTS.
