SO Good!
Cooked them on the stovetop with just salt and kombu and then made the suggested salad. My (somewhat) picky family has asked me to bring the salad to the lake with us. Will definitely purchase again if they become available.

I used Ayocote Medianoche beans and made the recipe that was given for the bean salad. It was lovely! The flavor and hardiness of the bean was so nice! We enjoyed the salad so much that my husband requested I get more to make the salad again. If you haven’t tried this you must! It is delicious!

Amazing!
Generally speaking, I am not a lover of the larger beans (I'm more of a Peruano- or Tepary-sized bean person) but these are awesome. I did a down and dirty cook on them - salt and a couple of cloves of garlic - and they were creamy and held their shape without the skin being tough. I couldn't stop picking at them in the pot! A heads up - they cook a lot faster than you'd think given their size.
