Kramer Carbon 2.0 7" Santoku Knife

Wonderful everyday prep knife

From earlier experience with carbon steel, I have learned to rinse and dry the blade immediately after use; this way it develops patina, not rust. Given this discipline, the Kramer Carbon Santoku has quickly become my go to everyday knife for any cutting task where a 7" blade makes sense. The handle provides a comfortable positive grip and the blade is so sharp as to require little effort other than aiming it. The balance is perfect, and I feel in complete control.
