Dover Sole

I live Carmel, California, one of the most beautiful sea towns in the world, filled with incredible restaurants but none of them have this Dover Sole which happens to be the best I’ve had anywhere in the world. It comes whole, frozen, headless and skinless so all I have to do is unwrap it . This fish isn’t fishy and it tastes fresh, flaky and smooth like it just came out of the ocean. The most amazing part of this is that I was able to cook it myself in less than 30 minutes!! This Dover sole is the only fish my husband will eat. All I do is roast it in a pan for a few minutes on each side in a little ghee and some capers, and then, in the same pan, I put it in the hot oven for five minutes, to get it evenly browned. I sprinkle a little chopped parsley and squeeze some fresh lemon on it, and no one can believe how fantastic it tastes. I like to keep at least 10 in my freezer because my friends always ask me to make it for them. It’s definitely my new favorite healthy food-I’ve been to our local fish markets, and all they have is thin white fish that rips apart . I doubt anyone could top this easy to make but extremely impressive whole Dover sole dish!
