Great knife!
Came in looking for a flattening plate left with this knife. Been holding back on buying a carbon knife for a while. Fear of this fear of that, but it's been wasted time. Getting to see the blade patina is like watching a living metal and just like my carbon wok those features give this knife a more personal, connected feeling. Taking care of it's been easy. I haven't oiled it, sometimes forget to wipe it down while cooking and so far no signs of rust. Shout out to Josh for the recommendations. Super nice guy, super patient with my Google degree in metallurgy and blade geometry and design. Jon also took a look at my older knife and critiqued my sloppy sharpening skills for me. The knives are great here, I've never had a problem. But the people are why I drive 2 hours out. Buy with confidence and thanks again to the whole jki team!

This knife is absolutely gorgeous. It has a wonderful in hand feel and weight to it making it extremely fun to use. I was pleasantly surprised to get a phone call from Josh at the store, checking that I was ready and willing to handle the responsibility of owning a carbon blade. So far I have had no problem with rust and the blade has kept its edge really well.

Razor sharp, nice balance
Another outstanding knife from Japanese Knife Imports. The reasonably priced offering from their Gesshin Uraku line arrived razor sharp and a joy to use as it made short work of slicing through a pile of vegetables. Beware the heel of the knife, though, if you are used to Western style knives with a bolster. It is also extremely sharp (and I have a bandaged thumb to prove it).
