I purchased the Nigara SG-STRIX Bunka a few months ago and was so impressed with the steel that I wanted something larger in the same line. The Gyuto handles everything I throw at it with grace and while it didn't need it, I was teaching how to sharpen on Japanese water stones and this sharpens much more like carbon steel than VG-10 or SG-2.
