Excellent Knife
The design overall is an excellent unit the blade in conjunction with the handle... My main concern was how it cut as opposed to the other knives I have. They are competent knives, but they range from very good to excellent, however they are heavier by comparison and not as balanced. I now know the ones whose angle geometry are not between 18-22 degrees must be corrected. As this knife cuts effortlessly. I will again be purchasing from here in the not too distant future without a doubt.

Beautiful, Well-Built Bunka with a Stout Feel
The Enso Hizashi 7” Bunka is a versatile, eye-catching knife that fills a gap other lines (like Shun Premier Blonde) don’t cover. It combines excellent materials, great balance, and strong everyday performance. The slightly curved edge allows for limited rocking, while the VG-10 steel delivers sharpness out of the box and impressive edge retention. It feels more substantial than expected, with a tsuchime finish that helps food release — though I wish the hammered pattern extended lower on the blade. Fit, finish, and aesthetics are excellent, and it could easily be mistaken for a Shun. Pros: • Premium materials and workmanship • Sharp out of the box with long edge retention • Stout, well-balanced feel • Tsuchime finish aids food release • Versatile edge with limited rocking ability • Fills a niche Shun doesn’t offer in Premier Blonde Cons: • Thick behind the edge, slightly limiting slicing performance • Handle may feel small for larger hands or hammer grip users • K-tip angle could be less steep for precision work Bottom line: A beautifully crafted, all-around performer with a bit more heft than expected. Not the thinnest slicer, but an excellent addition if you want a Bunka-style knife in this aesthetic. Photo: Hizashi 7” bunka vs 5.5” prep

Beautiful Little Knife
I got this particular knife mostly because of the blade height, which gives lots of knuckle clearance to my gorilla-like fingers. Aside from that, this thing is gorgeous. The handle is a little small (did I mention I have big hands), but the shape of the handle makes it comfortable to use despite its size. Overall, I love this knife. It's my first Bunka, and it has quickly replace my Santoku for the tasks I was using that for. Overall, very happy.
