best bbq beef ever.

as 60+ years a BBQ aficionado in both cooking and consumption. this rack was the single best BBQ I ever ate. it was a 5.5 hr cook on my smoker to an internal temp of 210 and then a covered foil wrap for 60 minutes after removing from the smoker. when I picked it up from the smoker, one of the ribs actuall fell out....totally clean. would order again but would love it in a 2 bone cut. it's just my wife and I and she doesn't eat beef so I have about 4+ days of this meal. it shrunk up and got very thick and the fat rendered beautifully into the meat. Bark from the dry rub was also perfect. Also got a "small" kurobota pork rack that I'm excited about. haven't tried it yet. gonna brine that and cook to about 135 but hit it with smoke for the first hour.+ roasting thereafter. this short rib plate was a BBQ highlight of my eating career. wish these came smaller sizes too.

wow, we are really delighted with the order of plate ribs we received. They were absolutely so delicious they cooked up tender and juicy and oh so flavorful.
