Outstanding Blades!

Beautiful knife, exceptionally sharp! I use the smaller chef so often, I purchased this to add to my Sobu set. Now if only Cangshan would make a smaller Santoku knife to match, my set would have it all!!

Quality Chef Knife

This knife handles very well and the blade was incredibly sharp. The steel is holding an edge well. My only complaint is about the fit and finish of the bolster meeting the handle wood. The metal sticks out past the wood all around and cuts into your hand when using it. If that fit and finish was better, it would be a 5 Star knife!
