Tojiro Classic is worth trying
What a great knife! Very sharp out of the box. Takes a little getting used to a Japanese style chef's knife vs Western style knives, but it is very enjoyable to use. Great for slicing and cutting.

Very Sharp and well balanced chef's knife
This knife was very sharp right out of the box. It has a thin blade ideal for veggie slicing. However, the sliced veggies tend to tenaciously stick to the sides of the blade which was sort of expected. The balance was good and even though the handle was not as long as my German knives it still fit the hand well. I understand this knife is supposed to be a bit toughter (less brittle) than most Japanese knives which is what I wanted.
