Remarkable Tool, but...
I purchased this with the specific intent of comparison against my ENSO SG2 knives, specifically to determine if the difference in the quality and performance of Ypsilon SG2 is commensurate with the difference in price. For transparency, I purchased this Kiritsuke on sale, for $255 after all discounts, which is well below both the MSRP for both the Ypsilon and the ENSO SG2 for this knife. So, is the difference between 101 vs 193 layers significant? My answer> not really. The difference in feel and performance from the Ypsilon to the ENSO SG2 is only slightly noticeable if you are paying attention. The Ypsilon feels great and truly is a remarkable tool, but for the cost, I will not be replacing my ENSO SG2 collection with Ypsilons, unless I find them on C&M at great deals like I did with this one.

Ypsilon SG2 8" Kiritsuke Knife
Knife is beautiful, but price is too high
Compared to Enso SG2 or Yaxell Super Gou I don't see much difference, except for the price.
