Tojiro Classic 7" Santoku Knife

Great Knife Even With My Personal Preference For Micarta.

Avid knife person I like a screaming sharp knife when it comes to my blades. Sharpened to 9 to 12 degrees this knife is right in the realm of how sharp I like my knives, sharp enough that I knicked myself and did not notice at all till I touched it. As well I just have to move the food I am cutting and it will cut with barely any pressure. The micarta grip is nice and grippy considering, I like to pinch grip/choke up when cutting. The two criticisms I have is one that the sheath that it comes with is that it is a plastic sleeve, IMO a knife of this quality should come with at least a magnetic or leather sheath for it. Two for me how I like my micarta I wish it was more aggressive as my hands favor rougher surfaces. Overall I love this knife and will be slowly buying the full set.
