Great knife
I have this Moritaka along with their large Gyuto. They are both very sharp and are easy to maintain the cutting performance. They can struggle with tall dense ingredients due to their unique geometry. However, they excel at most tasks and are easy to keep sharp.

Great rustic workhorse
Purchased this knife to be my daily workhorse (and my first full-size chef’s knife). It does not disappoint. The fit and finish are rustic as expected from Moritaka, and the edge was plenty sharp out of the box. Really enjoying using this every day!

Beautifully balanced and incredibly sharp.
This is a fantastic knife. It feels great in your hand and it cuts like nothing I’ve had before I hand sharpen on wet stones up to 12,000 grit and this is right about there. It is the definition of scary sharp. And the shape is wonderful it’s everything. I always wanted it in a Japanese chefs knife.
