First chef's knife
This is my first chef's knife, and I am addicted. I definitely recommend this knife due to the forgiving metal composition while learning to care for carbon, as well as the high quality. The high gloss finish causes a little extra stick when cutting the usual veggies, but it doesn't tarnish the metal while I'm slowly cutting. I really have fun dicing shallots and onions with this. And thin-slicing skirt steak is a breeze.

Knife arrived with a noticable curve and twist in the blade.
It can likely be worked to flat but the knife has a pretty big curve as well as a twist to the blade. Given it is such a long thin blade it is not too much of a surprise, but i expected something this dramatic to be worked out by the manufacturer prior to shipping.

Nice Knife
I like the balance and look of this blade. Time will tell as to its functionality and durability. I'm planning on be satisfied.
