Love at first slice
This review is from the perspective of an advanced home cook with no experience working in a professional kitchen. I’m fairly new to higher quality kitchen knives and this knife is my favorite so for. It came razor sharp and the blade is easy to maintain with a leather strop. I’ve not had any issues with rust since I keep this knife clean and dry at all times. This knife glides through meats and vegetables effortlessly. It outperforms my other knives like my VG-10, VG-MAX and SG2 blades from quality makers like Shun and Miyabi. The only other knives that slice and chop this well are my Zuma knives.
I also appreciate the top notch customer service from C&M. They graciously accepted returns of a couple of knives that I decided weren’t right for me. They are also quick to respond to questions.

Great Everyday Japanese Knife
I use this knife daily along with my German 8" chef knife. This Enso looks great, performs well, and holds a sharp edge in a professional kitchen the entire day. I have owned it 3 months now and have not needed to sharpen it. A quick hone at the start of the 14 hour shift, and it lasts the day. I highly recommend this knife for someone looking for their first Japanese style knife or gyuto. The included saya fits perfect, and makes this a seriously great value
