Definitely see it aiding in baked goods. The keto yeast bread was a bust but it definitely seems to add some body to otherwise pretty mushy almond flour stuff. The gluten and oat fiber additions to almond flour recipes is what I'm working on and while it's a work in progress I can see definite possibilities
