Really Great

Smoked for about 3 hours at 225. Turned out great. Very tender and tasty.

Iberico Baby backs

These baby backs were super tender. Very yummy. My mother in law requested ribs for her birthday dinner. They smoked about 1.5 hours quicker than supermarket ribs. Very lovely and affordable for Iberico from Spain.

Try a dry rub and slow roast at low heat. Finish with high heat for a few minutes to create crispy crust. They have a zing on the palate. Very high price. Worth it for occasional splurge.
