The Cod Takes the Cake!

So easy to cook in the pan without an abundance of oil! Tasty, salty cod but not overly, mixed with the potato which is amazingly not dry as is often found with these cakes. Stick a candle in one and will make a lovely, savoury, celebratory individual cake!
